Why steam changes
everything.

A boiling pot cooks seafood in water, and the flavour leaves with it. A steam tier cooks it in vapour; the sweetness stays in the shell, and what drips down becomes the stock you finish the meal with.

  1. The catch arrives live

    Prawns, clams, crab and reef fish from local Sabah waters, kept live until the table orders.

  2. Steam rises through the tiers

    Each tier lifts off in sequence, so every item cooks for exactly as long as it should, and not a minute more.

  3. The pot below becomes congee

    Everything that drips through collects in the rice base below. The last course is made by the first.

Alan Voo talked his way into the kitchen of Hong Kong roasting master Chef Yan, and out-worked everyone until the secret recipes for roast duck and wonton noodles were handed over. He followed Master Yan back to Hong Kong to finish the training properly, then brought it home to Kota Kinabalu.
